One More Comfort Meal

The other night, we decided to make a comfort meal.  Our comfort meal had a little twist to it.

The first twist was how I decided to make the meat loaf.  I got the idea of using a muffin stone from Taste of Home Magazine, but the recipe is one that I came up with on my own.  We had limited supplies, so I improvised.


Here is what I used:

1 lb ground beef

1 lb ground pork

1 cup oatmeal

1/2 cup roasted pepper

1/2 cup onion

2 tablespoons of crushed garlic



3/4 cup half and half

1 egg

Combine all ingredients, and then place equal amounts in each muffin section.  Cook at 375 until done.  Only about 30-40 min.


Well, we did not only have meatloaf, we also had broccoli and macaroni and cheese.  The brocoli was just your plain old boiled in broth broccoli, but the mac and cheese?  Well that was a little different.  I did not have any cheddar.  All I had was mozzarella, pepper jack and parmesan.  Um, my kids gobbled it down.

Here is the recipe:

2 cups noodles cooked

1 1/2 cups mozzarella

1 cup pepper jack

1 cup parmesan

4 tablespoons butter

2 tablespoon flour

1 1/2 cups half and half

salt and pepper

1 cup corn flake

1 tablespoon garlic powder

1 tablespoon onion powder

1/4 cup parmesan cheese

First, make a bechamel sauce by combining the butter and flour in a sauce pan.  Let it melt, and then slowly add the half and half, whisking constantly.  Add your cheese, one kind at a time, stirring to assure melting.  Add you salt and pepper.

In a casserole, place your cooked noodles, then add the cheese sauce.

Make the topping:  place corn flakes, onion and garlic powder and 1/4 cup parmesan cheese in a large baggie and smash it.  A great way to get your frustration out.  Sprinkle over the top of your mac and cheese.  Cook until bubbling in 375 degree oven.
