Homemade Cornmeal Hot Rolls


This is my grandmothers recipe and she was famous for them.  In fact she would make these for others to give as gifts around the holidays, plus the ones she would make for her own family.  From this recipe, she would also make her famous cinnamon rolls. I have spent years trying to make them like she did, and I think it will take years more.  However, I did have a great batch this Christmas!  So proud, and I think grandma would be proud too!

Here  is the recipe, and keep in mind, it is a recipe in bulk!

Cornmeal Rolls

1/2 cup cornmeal

1 cup water

2 cakes yeast (two packages)

1 pt. lukewarm water

1/2 cup sugar

3/4 cup oil

2 1/4 quarts flour

1/2 cup dry milk

1 Tbsp salt

Combine cornmeal and 1 cup of water.  Cook to thicken and let stand to cool.  Put yeast and 1 pt of water with sugar in mixing bowl, let stand for 5-10 minutes.  To yeast mixture, add 3/4 cup oil and cornmeal mixture.  Mix together.  Sift flour, milk and salt together.  Slowly add to wet ingredients, and mix well about five minutes on mixer, or you can mix by hand well until ingredients are incorporated and you get a sticky yet firm consistency.  Let this rise until double in bulk.  Punch down and knead for five minutes.  Shape into rolls and let rise for 20 more minutes.  Cook at 425 for 15 minutes.
