Useful Equivalent

These are taken from my Great Grandmothers book she put together for my mother. The book was completed in 1968, but was written for a few decades.  I always refer to this book as the Record Book.

Useful Equivalents

1/2 cup evaporated milk and 1/2 cup water = 1 cup milk

1 tablespoon cornstarch = 2 tablespoons flour (thickening)

4 to 5 lemons = 1 cup of juice

14 to 16 slices of bacon = 1 lb

3 1/2 cups walnuts (chopped) = 1 lb

1 package of macaroni (8 oz) = 4 cups cooked

1 cup raw rice = to 3 cups cooked

16 oz = 1 lb

1 cup bread crumbs (stale) =2 oz

2 teaspoons = 1 tablespoon

16 tablespoons of liquid = 1 cup

12 tablespoons dry = 1 cup

1 cup = 1/2 a pint

2 cups = 1 pint

2 tablespoons sugar = 1 ounce

4 tablespoons flour = 1 ounce

2 tablespoons of butter = 1 ounce

4 tablespoons of cocoa = 1 square of chocolate

8 egg whites = 1 cup

12 egg yolks = 1 cup

1 cup of butter = 1/2 pound

4 cups of flour = 1 pound

2 cups of chopped meat tightly packed = 1 pound

2 cups of raisins = 1 pound

1 cup chopped nuts =1/2 pound

2 cups granulated sugar = 1 pound

4 tablespoons = 1/4 cup

6 tablespoons = 3/8 cup

8 tablespoons = 1/2 cup

2 tablespoons = 1 fluid ounce

1 cup = 8 fluid ounces

2 cups = 1 pint

2 pints = 1 quart

4 quarts = 1 gallon

16 cups = 1 gallon

8 pints = 1 gallon

60 pounds Irish potatoes = 1 bushel

8 quarts = 1 peck

50 pounds sweet potatoes = 1 bushel
